Good Evening Bloggers!  Two blogs in 1 weekend!  This is a record for me!  (I’m trying to do better guys and gals!)  I promised Brandon that I would make him his choice of cookies for all the favors he recently has done for me.  Including getting me a piece of wood for my upcoming project to make a Mason Jar Herb Garden for my kitchen.  Although, I was hoping for a few pieces of “wormy chestnut” (hint, hint, hint Brandon … hehe …).

Brandon chose peanut butter chocolate chip cookies.  Unfortunately, I did not have a recipe on hand, but I found this easy recipe online.  I did “quality control” on the cookies and they are quite yummy.  I hope he likes them!

Peanut Butter Chocolate Chip Cookies

Recipe from “Meals, The Best from Nestle Kitchens”

Ingredients:

  • 1 1/4 cups white whole-wheat flour
  • 1/2 teaspoon salt
  • 1/2 cup packed light brown sugar
  • 1/4 cup natural creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • 1/4 cup chopped dry-roasted peanuts
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup semi-sweet chocolate morsels

Directions:

  1. Preheat oven to 350 degrees
  2. Combine flour, baking soda and salt in medium bowl; stir.
  3. Combine butter, brown sugar, granulated sugar in large mixer bowl until combined.  Stir in peanut butter.  Stir in egg and vanilla extract.  Gradually stir in flour mixture.  Stir in morsels and peanuts.
  4. Using a level tablespoon, roll the dough into balls; place on ungreased baking sheets spacing about 2 inches apart.  Flatten slightly with a fork.
  5. Bake for 8-10 minutes or until edges are set but centers are still soft (they will look under done).  Cool on baking sheets for 4 minutes; remove to wire racks to cool completely.
